a winged dinner turned into brilliance!!

So raiding the cabinets to see what we have to make a quick and easy dinner... i see i have chicken left over from the soup i made from when i was sick and cheese and shells from we made tacos last week. I buy low carb shells, which  weren't as bad as i thought they would be. I saw we had a can of black beans from chili that was never made so i googled black bean chicken quesadillas ... i found 3 recipes that i liked bits and parts of so i combined what i like and winged it!! OMG amazing!!!

So i took the beans and mushed them with a fork in a bowl. Then i took the shell and rubbed just a dot of oil on it and flipped it over on the pan. Then rubbed the black bean paste on half the shell and sprinkled a little cheese.  I cooked the chicken in a separate pan and cooked it in a smidge of oil and sprinkled with chili powder, cumin and garlic powder and cooked it up. I put the cooked chicken on top of the sprinkle of cheese and then put more cheese on it and sprinkled some cooked corn.  Then i flipped it in half cooked each side like 4 mins and viola!!
i also took a little salsa and put it on top... i couldn't believe how good it was... and it was LOW CARB!!! mmmmm this will definitely be a repeat dinner!!

  2. this week was all jacked up because of being sick.... and it would have been taco wednesday LOL we had chicken and rice today
